These amazing anchovies are sustainably wild-caught in the Cantabrian Sea, which forms the southern portion of the Bay of Biscay.

Upon harvest, they’re packed in salt in large barrels to cure in a traditional “salumera” process for 5 to 6 months.

After being salt-cured to ensure complete safety/purity, the fish are hand filleted and jarred in olive oil.

Serving tips
Donostia Anchovies add depth to any dish in which these small, fatty fish are traditionally used, from pizzas to salads.

For a quick pintxo — the Basque term for tapas — try the classic “Gilda” tapa popular in the stunning coastal city of Donostia, which non-Basque Spaniards call San Sebastián.

Simply skewer an anchovy, an olive, and a guindilla pepper on a toothpick. (Any thin, medium-hot pepper will do in a pinch.)

"Expensive but extraordinary" Jules G on 02/15/2019 07:28 Review: Admittedly, at first, the cost kept me hesitating to buy; it is double the price of Wild Planet, what I can buy at the local Kimberton Whole Food. However, once I have tasted this Cambrian Anchovy, I will never buy anything else. To say it is fantastic, does not even begin to describe it. Before tasting this I consumer anchovy for the benefit of Omega 3 and the extra kick taste it gives to our version of Mediterranian Salad. This anchovy, however is beyond anything like this I have ever tasted. Some time ago I started out barely tolerating small amount of anchovies with lots of salad. THIS: I can eat it by itself and feel I am in heaven.
