Description

Our calamari squid is the northern shortfin variety (Illex illecebrosus), which ranges Atlantic waters from Maine to Virginia. It is harvested using an "otter trawl," which significantly reduces the unintended capture of other species. Calamari's mild flavor and firm texture make it a delicious appetizer and a tasty addition to pasta, cioppino, paella, and seafood stews or soups.
