Salmon with Ginger Salsa
Prep Time: 15 minutes | Cook Time: 10 minutes | Total Time: 25 minutes
Ingredients
- 4 Vital Choice wild salmon fillet portions (6 ounces each)
- 2 peaches or mangoes, diced
- 1 large tomato, diced (omit juice)
- 4 scallions, chopped
- 2 tablespoons cilantro, chopped
- 2 teaspoons fresh ginger root, finely minced or 1/2 teaspoon ground ginger
- 1 tablespoon Vital Choice balsamic vinegar
- Oil for grill
- Juice of 1 lime or lemon
Instructions
- Make salsa: Mix peaches, tomato, scallions, cilantro, ginger and balsamic in a medium bowl. Set aside.
- Heat grill and brush with oil. Sprinkle lemon juice over salmon.
- Grill salmon fillets for 3 to 4 minutes on each side.
- Remove salmon from grill and top with salsa.
