Mackerel or Sardines in Creole Sauce

Mackerel or Sardines in Creole Sauce



  • 1 can Vital Choice Portuguese Sardines in Organic Tomato Sauce (4.4 ounces) or Vital Choice Atlantic Mackerel
  • 2 tablespoons Vital Choice extra virgin olive oil
  • 1/2 bell pepper, julienned
  • 1/2 onion, julienned
  • 4 cloves garlic, mashed
  • 1 can tomato sauce (8 ounces)
  • 1/2 cup water
  • 1 organic bay leaf
  • 1 1/2 teaspoon organic ground cumin
  • 1/2 teaspoon organic oregano
  • 1/2 teaspoon organic cayenne pepper
  • Sea salt to taste
  • 1/2 bunch cilantro or parsley, minced


  1. Sauté olive oil, bell pepper, garlic and onion in a medium to large pan over medium heat until fragrant and onion is translucent.
  2. Add tomato sauce, water, cumin, oregano and bay leaf. Stir well and bring to a boil.
  3. Reduce to a simmer and add fish. Cook on low for 20 minutes.
  4. Serve with rice and salad, steamed okra or asparagus.
