Cod with Cherry Tomatoes and Pine Nuts
This quick and easy recipe is ideal for everyday cooks, and takes advantage of fabulous summer fare: cherry tomatoes and fresh basil. They make the perfect companion to light, versatile Vital Choice Alaskan cod or halibut. A great meal on a warm summer evening, or to make a wintry one feel like summer!
Cod with Cherry Tomatoes and Pine Nuts

Ingredients
- 4 portions Vital Choice Alaskan cod or halibut (4 to 6 ounces each)
- 1 tablespoon Vital Choice organic extra virgin olive oil
- 2 teaspoons garlic and herb seasoning
- 2 1/2 cups cherry tomatoes
- 1 tablespoon toasted pine nuts
- 1/4 cup chopped fresh basil, divided
Instructions
- Heat oil in a large nonstick skillet over medium-high heat. Sprinkle fillets with seasoning and pepper to taste.
- Add fillets to skillet. Cook 2 to 3 minutes per side or until golden brown.
- Add tomatoes to skillet; cover and cook 3 minutes. Stir in pine nuts and half the basil; cook 2 minutes more or until tomatoes begin to burst and fish flakes easily with a fork. Transfer fillets to a platter.
- Stir tomato mixture and season with pepper to taste. Spoon over fillets, sprinkle with remaining basil and serve.
