Chicken Caesar Salad with Salmon Bacon Bits

Chicken Caesar Salad with Salmon Bacon Bits

Ingredients

  • Vital Choice salmon bacon bits 
  • 2 heads of romaine or iceberg Lettuce
  • 2 chicken breasts (Seasoned with salt, pepper, lemon pepper seasoning)
  • 1 handful of pumpkin or sunflower seeds
  • Parmesan cheese, to serve
  • 1 egg
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, peeled
  • 2 anchovies (Optional)
  • 1/4 cup melted organic coconut oil
  • 1/4 cup organic extra virgin olive oil

Instructions

  1. Make dressing: Add egg, lemon juice, mustard, garlic and anchovies to a food processor and pulse until combined (make sure to blend it on high to ensure that the garlic gets minced enough). Turn speed to low, combine the oils and slowly pour them into the food processor. You will see it emulsify and thicken.
  2. Heat a small amount of coconut oil in a pan over medium heat.
  3. Season chicken breasts with salt, pepper and your choice of herbs. Add it to the hot pan.
  4. While the chicken is cooking, chop the lettuce and plate it.
  5. When the chicken is cooked through, plate it on the lettuce.
  6. Use a peeler to curl shavings of parmesan over the top.
  7. Sprinkle the salmon bacon bits and then drizzle with the dressing and serve.
