Our recipe features three flavors characteristic of Caribbean cooking: lime juice, hot sauce and mint. We paired these vibrant flavors with onion – another antioxidant powerhouse – to create a wonderfully tasty, healthful topping.

Ingredients

  • 4 portions Vital Choice Alaskan cod or halibut (4 to 6 ounces each)
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1 tablespoon Vital Choice organic extra virgin olive oil
  • 1/2 teaspoon hot sauce
  • 2 tablespoons fresh mint, chopped
  • 2 1/2 green onions, thinly sliced

Instructions

  1. Make marinade: Combine orange juice, lime juice, olive oil and hot sauce in a shallow dish.
  2. Add fillets to marinade, turning to coat. Cover and let stand 15 minutes at room temperature.
  3. Meanwhile, combine mint and green onions in a small bowl. Season with freshly ground black pepper to taste; set aside.
  4. Coat a grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove fillets from marinade; discard marinade.
  5. Grill fillets, covered, 4 to 5 minutes per side or until fish flakes easily with a fork. Transfer fillets to a platter, top with mint mixture and serve.
