Caribbean-Style Halibut or Cod

Ingredients
- 4 portions Vital Choice Alaskan cod or halibut (4 to 6 ounces each)
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1 tablespoon Vital Choice organic extra virgin olive oil
- 1/2 teaspoon hot sauce
- 2 tablespoons fresh mint, chopped
- 2 1/2 green onions, thinly sliced
Instructions
- Make marinade: Combine orange juice, lime juice, olive oil and hot sauce in a shallow dish.
- Add fillets to marinade, turning to coat. Cover and let stand 15 minutes at room temperature.
- Meanwhile, combine mint and green onions in a small bowl. Season with freshly ground black pepper to taste; set aside.
- Coat a grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove fillets from marinade; discard marinade.
- Grill fillets, covered, 4 to 5 minutes per side or until fish flakes easily with a fork. Transfer fillets to a platter, top with mint mixture and serve.
