Butter Poached Lobster

Ingredients
- 1 pack of Vital Choice shucked lobster meat (16 ounces)
- 2 to 3 tablespoons water
- 1 cup (2 sticks) cold butter cut into 1 tablespoon pieces
Instructions
- Bring water to a simmer in a small, shallow saucepan over medium heat.
- Whisk in 1 tablespoon of butter at a time, adding the next after each melts. Do not let the butter come to a boil or the butter will separate. Use an instant read thermometer to keep the butter between 160 and 175 degrees F.
- Add defrosted, raw lobster meat to the melted butter mixture.
- Cook for 6 to 8 minutes and turn meat in butter mixture. Make sure the butter does not come to a boil, reduce the heat if necessary.
- Be careful not to overcook lobster. Poached lobster should have an an internal temperature of about 140-145° F.
