Ingredients

  • 4 Vital Choice wild salmon fillets (6 ounces each)
  • 6 cups water
  • 2 packages natural ramen, soba, or rice noodles (6 to 8 ounces each)
  • 3 cups total of any four of the following, in roughly equal proportions: edamame beans, sliced napa cabbage, bok choy, sliced carrots, chopped spinach, sliced mushrooms, snow pea pods
  • 1/4 cup julienned fresh ginger
  • 1/4 cup chopped scallions
  • 2‒4 teaspoons low-sodium natural soy sauce, to taste (or same volume white miso paste)
  • Crushed peanuts for topping

Instructions

  1. Bring water, ginger and scallions to boil in large pan. Turn off heat and add salmon, then return heat to simmer. Cover pan tightly and cook for 5 minutes.
  2. Add noodles and vegetables to pan then drizzle with soy sauce. Cover pan tightly and cook an additional 1‒2 minutes (or to noodle package directions), until fish is just opaque throughout. If noodles require more than two minutes to cook only add salmon for the last two minutes.
  3. Serve in bowls with crushed peanuts on the side.
