Tapatío Grilled or Broiled Salmon Fish Tacos

Ingredients

  • 2 portions Vital Choice wild Alaskan salmon (4 ounces each)
  • 2 tablespoons vegetable oil for grill or broiler pan
  • 1 teaspoon Tapatio seasoning powder
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • ¼ red cabbage, shredded
  • 2 carrots, shredded
  • 1 cup cilantro leaves, minced
  • ½ cup mayonnaise
  • 1 tablespoon Tapatio hot sauce, plus extra for garnish
  • 1 tablespoon lime juice
  • 1 teaspoon agave nectar
  • 2 avocados, sliced
  • 8 small corn tortillas

Instructions

  1. Combine cabbage, carrots, minced cilantro, mayonnaise, Tapatio hot sauce, lime juice and agave in a bowl. Toss to coat and set aside.
  2. Pre-heat grill or broiler to high heat
  3. Combine salt, pepper, Tapatio seasoning powder in a bowl. Coat salmon with rub.
  4. Warm corn tortillas on grill for 1 minute and wrap in foil to keep warm.
  5. Brush grill or broiler pan with non-stick cooking spray or vegetable oil.
  6. Grill or broil salmon 3 minutes per side Remove from heat and roughly shred with a fork - it should flake away easily, but try to keep medium-sized chunks
  7. Add salmon to each warm corn tortilla. Top with a ¼ cup slaw, avocado slices and extra Tapatio hot sauce.
