Ingredients

  • 4 Vital Choice wild salmon fillet portions (6 ounces each)
  • 2 peaches or mangoes, diced
  • 1 large tomato, diced (omit juice)
  • 4 scallions, chopped
  • 2 tablespoons cilantro, chopped
  • 2 teaspoons fresh ginger root, finely minced or 1/2 teaspoon ground ginger
  • 1 tablespoon Vital Choice balsamic vinegar
  • Oil for grill
  • Juice of 1 lime or lemon

Instructions

  1. Make salsa: Mix peaches, tomato, scallions, cilantro, ginger and balsamic in a medium bowl. Set aside.
  2. Heat grill and brush with oil. Sprinkle lemon juice over salmon.
  3. Grill salmon fillets for 3 to 4 minutes on each side. 
  4. Remove salmon from grill and top with salsa.
