Alaska Smoked Salmon Capri Salad

This one's perfect for the end of long, hot day, or a spirit lifting lunch to take to work. If you prefer, use our cold-smoked Sockeye Salmon lox or cooked and chilled Salmon, instead of our hot-smoked Sockeye or King Salmon

Alaska Smoked Salmon Capri Salad

Serves 4

1 package (7 to 10 oz) salad greens: spinach, arugula, spring greens and/or chopped romaine
1 jar (14 oz) quartered marinated artichoke hearts, reserving liquid

8 oz Smoked Alaska Sockeye Salmon, chunked
1 ripe, firm avocado, pitted, peeled and sliced or chunked

1 tablespoon tarragon or white wine vinegar
2 tablespoons organic extra virgin olive or macadamia nut oil
2 teaspoons Dijon-style mustard
