Ingredients

  • 4 albacore tuna medallions (4 ounces each), cut in 1/2 inch dice
  • 1/4 cup plus 2 tablespoons Vital Choice extra virgin olive oil
  • 1 large onion, cut in 1/2 inch dice
  • 1 can tomatoes (35 ounces), drained and chopped
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped fresh mint
  • 3 garlic cloves, thinly sliced
  • 1 pound linguini

Instructions

  1. Heat 1/4 cup oil and onion in skillet over low heat for 10 to 12 minutes. Add tomatoes, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook over moderate heat, partially covered, until thickened (about 5 minutes). Remove from heat and set aside.
  2. Season tuna with remaining salt and pepper.
  3. Heat remaining oil in medium skillet. Add tuna and cook over medium heat for about 4 minutes.
  4. Cook pasta and drain. Add sauce to pasta, divide among serving plates and enjoy!
