Orange Balsamic Basil Marinated Salmon

[Editor's note: Alexandra's recipe presumes regular red balsamic vinegar, but if desired, you could use white balsamic vinegar without a major change to the end result.]
Prep time 15 minutes
Cook time 6 to 8 minutes
Makes 4 servings
1 orange, cut into 1/4-inch round slices
Juice of 1 orange
8 garlic cloves, minced
2 tablespoons organic balsamic vinegar
1/4 cup chopped basil leaves
Organic coarse ground black pepper
1/4 teaspoon salt
Instructions

Preheat the oven to 400 F.

Set aside the orange slices. Whisk together the orange juice, garlic, balsamic vinegar, basil, salt and a sprinkling of black pepper in a large bowl.

Add the salmon, turn to coat, and let sit covered for 15 minutes. Remove the salmon from the marinade, shake off the extra, and place on to a baking dish. Bake for 6-8 minutes, until slightly pink in the middle. Serve accompanied by the orange slices.
