Ginger Lime Halibut Salad

Ingredients
- 1 pound Vital Choice Alaskan halibut, cooked and shredded into chunks
- 6 cups chopped romaine lettuce
- 1/2 cup chopped fresh cilantro
- 1 cup shredded carrots
- 1 large avocado, peeled and sliced
- 1/4 cup Vital Choice organic extra virgin olive oil
- 1/8 cup lime juice
- 1 tablespoon fresh lime zest
- 1 tablespoon grated ginger
- 1/2 tablespoon agave nectar
- 1 clove garlic, minced
- Sea salt and freshly ground black pepper, to taste
Instructions
- Mix together the lettuce, cilantro, carrots, halibut and avocado in a large bowl.
- Make the ginger lime vinaigrette: Whisk the olive oil, lime juice, ginger, agave, garlic, and salt and pepper to taste together in a small bowl.
- Pour the dressing over the salad and serve.
