Dr. Pratt's SuperFoods Salad

We admire the approach to health taken by Dr. Steven Pratt in his new book, SuperFoods HealthStyle, which features fresh, whole, unprocessed foods high in key anti-aging nutrients—like omega-3s—and "functional factors", such as the antioxidant pigments that make so many colorful fruits and vegetables especially healthful.

We're featuring his SuperFoods Salad recipe this week, but we've added one of his 17 super foods—wild salmon—to the mix.

Steven Pratt's SuperFoods Salad (plus Salmon)

Dr. Pratt says he eats this salad almost every day, and it seemed smart to create a version with salmon. You can also add a handful of your favorite chopped fresh herbs and a tablespoon of Parmesan.

1 cup spinach torn into bite-size pieces

1 cup chopped romaine

1/4 cup shredded red cabbage

1/2 cup sliced red bell pepper

1/2 tomato, chopped

1/4 cup chickpeas; if canned, rinse well

1/2 cup grated carrot

1/4 avocado, cubed

3.75 oz can wild salmon or 4 oz hot or cold smoked salmon

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

  • Combine the spinach, romaine, cabbage, red pepper, tomato, chickpeas, carrot, salmon, and avocado in a bowl.

  • Whisk together the olive oil and vinegar.

  • Toss the dressing with the salad just before serving.
