Cool Salmon Salad

Cool Salmon Salad

Ingredients

  • 4 Vital Choice wild salmon fillets (6 ounces each)
  • 1 cup dry white wine
  • 1 cup water
  • 4 sprigs fresh dill plus 1 tablespoon chopped
  • 1/4 cup store bought dill dressing
  • 8 cups baby spinach or other greens

Instructions

  1. Bring wine, water and dill sprigs to a gentle simmer in a deep skillet large enough to hold the salmon in one layer. Add salmon, cover and simmer for 10 minutes or until cooked through. Remove salmon from pan and allow to cool.
  2. Divide greens equally on four dinner plates. Place a piece of cooled salmon on top of each and drizzle dressing over the top. Sprinkle with chopped dill.
