Alaskan Cod with Garlic, Peas, and Parsley

Ingredients
- 3 to 4 Vital Choice Alaskan cod fillets (6 ounces each)
- 1 tablespoon Vital Choice organic extra virgin olive oil
- 1 tablespoon flour
- 1 1/2 cups fish broth
- 1/2 cup frozen green peas, thawed
- 1 cup packed chopped fresh parsley
Instructions
- Rinse fillets; pat dry with paper towels. Season with pepper to taste.
- Heat oil in a large nonstick skillet over medium-high heat. Add garlic; cook 1 to 2 minutes without browning. Add flour; stir to dissolve. Stir in broth; bring to boiling.
- Add fillets; reduce heat. Simmer 10 to 15 minutes or until fish flakes easily with a fork.
- Add peas and parsley; cook until heated through.
- Place fillets on a serving platter, spoon sauce over and serve.
