Salmon Frittata
Here’s an easy one for a brunch party, or anything you choose!  

Serves 12

2 to 3 (6 oz each) Vital Choice Smoked Sockeye portions
Olive, sunflower, or canola oil (in pump spray can)
1 dozen eggs, beaten
1 pint non-fat cottage cheese
2 cups shredded Swiss cheese
1 package (10 oz) frozen chopped spinach, thawed and drained
1 teaspoon dried basil
1/8 teaspoon cayenne pepper
Chopped fresh dill (optional)

  • Flake salmon. 
  • Spray 9 x 13-inch baking pan with vegetable oil. 
  • Combine flaked salmon with remaining ingredients and pour into prepared baking pan. 
  • Bake at 375 F for 30 minutes, or until frittata is set (inserted toothpick comes out clean). 
  • Garnish with dill (optional) and serve.
