Enjoy these mussels as a simple afternoon lunch, served with a toasted baguette for dipping in the heavenly broth. The true star of the show is high-quality shellfish: since Vital Choice frozen Pacific blue mussels are pre-cooked and pasteurized, even unopened mussels are perfectly safe to eat! They can also go directly from the freezer to the stove with no thawing, making for a quick and easy meal.

Ingredients

  • 1 pound Vital Choice Frozen Pacific Blue Mussels
  • 2 tablespoons yellow onion, finely chopped
  • 2 tablespoons shallot, finely chopped
  • 1/4 cup dry white wine
  • Splash of white wine vinegar
  • 2 tablespoons butter, cubed
  • Fresh Italian parsley, chopped (for garnish)

Instructions

  1. Combine yellow onion, shallot, white wine, white wine vinegar and butter in a sauté pan.
  2. Add the frozen mussels; cover and bring to a boil, steaming for about four minutes.
  3. After steaming, remove mussels from the pan and strain broth in cheesecloth. Discard any unopened mussels.
  4. Add broth to serving bowls, topped with mussels and a garnish of chopped fresh Italian parsley.
