Tuna in Bell Peppers

Ingredients
- 2 cans Vital Choice wild Skipjack or Albacore tuna (6 ounces each), drained
- 1/2 cup low-sodium tomato juice
- 3 tablespoons lemon juice
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Pinch black pepper, or to taste
- 2 tablespoons green or red pepper, minced
- 2 small carrots, shredded
- 2 green peppers, halved lengthwise and seeded
Instructions
- Make the dressing: combine the tomato juice, lemon juice, onion powder, paprika and black pepper in a small bowl.
- In another bowl, combine the tuna, carrot and minced pepper.
- Pour the dressing into the tuna salad and mix thoroughly.
- Fill the green pepper halves and enjoy.
