Sardines Simmered with Roma Tomatoes
This deliciously simple recipe comes to us courtesy of the Seafood Nutrition Partnership. It was created by SNP Ambassador Michael-Ann Rowe, who earned an Emmy® Award for her three-part documentary series, Off the Beaten Palate. This dish can be served with or over pasta, salad, or sautéed greens.
Sardines Simmered with Roma Tomatoes

Ingredients
- 1 can Vital Choice sardines
- 1 large can chopped Roma Tomatoes (32 ounces)
- 8 cloves roasted garlic (optional)
- 1 teaspoon red pepper flakes or ½ teaspoon paprika (optional)
- Baguette (good for sauce-dipping, optional)
Instructions
- Heat tomatoes in medium-size pan over medium heat for 5 minutes.
- Optionally, add roasted garlic and red pepper flakes or paprika for added flavor and spice.
- Add can of sardines. Cover and cook over medium to low heat for 15 minutes, turning once.
- Transfer sardines and sauce to a bowl in middle of table, or plate portions of sardines with sauce atop or alongside pasta, a green salad, or sauteed greens (e.g., spinach or chard). Enjoy with baguette on the side.
