Salmon or Tuna Pasta Salad
This recipe works well with either fish… take your pick!
4 oz fusilli or macaroni, cooked, drained, and rinsed with cold water
1/2 pint cherry tomatoes, cut in half
1 cup sliced cucumber
1/2 cup mozzarella cheese, cut into thin strips
1/4 cup chopped parsley
1/8 cup grated Parmesan cheese
Lemon Dressing (see below)
- Drain and flake salmon or tuna. Toss flaked fish with remaining ingredients in large serving bowl. Toss with Lemon Dressing and serve.
1/8 cup lemon juice
1 clove garlic, minced
1/4 teaspoon dill weed
1/4 teaspoon grated lemon peel
- Whisk together ingredients until well combined.
