Marinated Mediterranean Salmon

Marinated Mediterranean Salmon

Ingredients

  • 6 Vital Choice wild salmon fillets (6 ounces each)
  • 3/4 cup organic Vital Choice extra virgin olive oil
  • 6 ounces frozen limeade, thawed
  • 3/4 cup natural tamari soy sauce (low-sodium)
  • 2 tablespoons minced fresh garlic
  • 2 tablespoons chopped fresh rosemary

Instructions

  1. Combine limeade, olive oil, soy sauce, garlic and rosemary in a flat dish.
  2. Place salmon in marinade and turn several times to coat. Cover and refrigerate for 30 minutes.
  3. Preheat grill or broiler to medium-high heat.
  4. Remove salmon from marinade and place on a well-oiled grill or rack, 4‒5 inches from heat. Cook, turning once, for 6‒8 minutes until fish is just opaque throughout.
