Grilled Shrimp with Dill & Tzatziki Sauce

Grilled Shrimp with Dill & Tzatziki Sauce

Ingredients

  • 1 pound Vital Choice jumbo spot prawns or shrimp, thawed, cleaned and deveined
  • 2 tablespoons Vital Choice organic extra virgin olive oil, divided
  • ¼ cup plus 2 tablespoons fresh dill, chopped
  • 1 teaspoon dried oregano, crushed
  • Zest of one lemon
  • 5 garlic cloves, grated
  • Salt
  • ½ cup Greek yogurt
  • ¼ cup grated cucumber, excess water squeezed out
  • Juice of half a lemon

Instructions

  1. Marinate the prawns (or shrimp) with 1 tablespoon olive oil, 1/4 cup dill, oregano, lemon zest, 3 cloves garlic and salt to taste for at least 2 to 3 hours.
  2. Half an hour before grilling, juice the lemon into the shrimp. Skewer the shrimp and grill until just done. 
  3. Make Tzatziki Sauce: Mix greek yogurt, cucumber, 2 garlic cloves, lemon juice, 1 teaspoon salt, 1 tablespoon olive oil and 2 tablespoons dill together. Taste for seasonings and let it sit for half an hour.
  4. Serve shrimp with freshly grilled pita and tzatziki sauce.
