Instead, this simple recipe matches this antioxidant-rich culinary herb with onion – another antioxidant powerhouse – to create a wonderfully tasty, healthful topping.
Caribbean-Style Halibut or Cod
Cook Time: 30 minutes
1/4 cup fresh orange juice
1/4 cup fresh lime juice
1 tbsp. olive oil
1/2 tsp. hot sauce
4 (4-oz.) halibut or cod fillets
2 tbsp. chopped fresh mint
2 1/2 green onions, thinly sliced
- For the marinade, in a shallow dish combine orange juice, lime juice, olive oil and hot sauce. Add fillets, turning to coat. Cover and let stand 15 minutes at room temperature.
- Meanwhile, in a small bowl combine mint and green onions. Season with freshly ground black pepper to taste; set aside.
- Coat a grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove fillets from marinade; discard marinade.
- Grill fillets, covered, 4 to
5 minutes per side or until fish flakes easily with a fork. Transfer fillets to a platter, top with mint mixture, and serve.
