Caribbean-Style Halibut or Cod

Our recipe features three flavors characteristic of Caribbean cooking.

Lime juice and hot sauce are commonly employed in Caribbean cuisine, and mint is often used in fruit salsas.

Instead, this simple recipe matches this antioxidant-rich culinary herb with onion – another antioxidant powerhouse – to create a wonderfully tasty, healthful topping.

Caribbean-Style Halibut or Cod
Cook Time: 30 minutes
Servings 4

1/4 cup fresh orange juice
1/4 cup fresh lime juice
1 tbsp. olive oil
1/2 tsp. hot sauce
4 (4-oz.) halibut or cod fillets
2 tbsp. chopped fresh mint
2 1/2 green onions, thinly sliced
  1. For the marinade, in a shallow dish combine orange juice, lime juice, olive oil and hot sauce. Add fillets, turning to coat. Cover and let stand 15 minutes at room temperature.
  2. Meanwhile, in a small bowl combine mint and green onions. Season with freshly ground black pepper to taste; set aside.
  3. Coat a grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove fillets from marinade; discard marinade.
  4. Grill fillets, covered, 4 to 5 minutes per side or until fish flakes easily with a fork. Transfer fillets to a platter, top with mint mixture, and serve.
