This classic seafood stew was created by San Francisco's Italian fishermen more than 100 years ago, as a quick, easy, delicious way to enjoy odds and ends from the catch of the day.

Vital Choice Organic Cioppino is handmade in an artisan kitchen, using our own unique, savory recipe, inspired by the original.

Easy preparation

It couldn't be simpler to serve up some Cioppino:

  • Thaw the pouch contents, empty into a saucepan, and heat gently until steam curls up.
  • Add your choice of thawed* seafood — we suggest 3 to 6 ounces per person.
  • Cover the pan and simmer the stew on low until the seafood is almost done (5 to 8 minutes). Do not allow the stew to fully boil, or to simmer longer than is needed to cook the seafood through.
  • Remove pan from heat and leave lid in place for 3 to 4 minutes.
  • Ladle the Cioppino into bowls – with or without some freshly cooked linguine – and enjoy!

One Cioppino pouch serves two to four, depending on the amount of seafood and/or vegetables added.

Optionally, you can include some pre-cooked vegetables (e.g., spinach and zucchini) and/or beans … just don't overcrowd the stew!

*To quick-thaw any of our fish or shellfish: keeping fish portions in their sealed packages, immerse in cold water until fully flexible (20-30 minutes).

You can use frozen fish and shellfish in the stew ... just double the cooking time indicated above.

What's in a name?

Cioppino was created by Portuguese and Italian fisherman who settled in the North Beach section of San Francisco in the late 1800s.

Cioppino traditionally consists of the catch of the day … often a mix of crab, clams, shrimp, scallops, squid, mussels, and fish.

The name may come from ciuppin ... a Genoese word meaning "chopped", in reference to the way fishermen prepared seafood for the stew.

Others say it derives from the cry of the wharf cooks for the fishermen to "chip in" to the collective soup pot.

Either way, it's delicious!

Storage
Keep frozen and use by "Best By" date on package. Once thawed, store any unused portion in the refrigerator for up to one week.

Thaw pouch in a bowl — to catch leaks due to small tears/holes that may develop on rare occasions — under refrigeration at or below 38 degrees Fahrenheit (3 degrees Celsius).
