Because it’s back-to-school time, we thought we’d offer a simple but tasty customer-submitted tuna sandwich recipe called Shar's Tuna Delight.
Shar's Tuna Delight
Use for sandwiches (regular size or “tea”), salads, or dip (mix with a little cream cheese to make a tuna dip).
2 green onions cut up
1-2 stalks of celery (add a little or a lot for your taste), cut up
1 tablespoon (or to taste) organic garlic ranch dressing*
Sprinkle of organic all-purpose seasoning*
2-3 sprigs cilantro, chopped coarsely
*Editor’s note: You could add canned garlic spread to an organic ranch dressing, or Whole Foods makes a 365 brand Organic Ranch dressing with chopped garlic; Vital Choice Organic Salmon Marinade Mix could serve as the organic all-purpose seasoning.
- In food processor, place drained tuna and process till all big chunks are gone (1 to 2 seconds).
- Add chopped celery, green onion, cilantro, garlic ranch dressing, and seasonings and process till smooth (3 or 4 seconds).
- Chill in refrigerator for 2-3 hours or overnight. Or, you can make a sandwich before bed and put in refrigerator for the next day (don't add tomato until you’re ready to eat).
Voilá... yummy… enjoy!
Tips for Sandwiches
I use Oat Bran or multigrain bread, spread a little real butter on both slices, and spread a little garlic ranch dressing on one slice. Add Romaine Lettuce leaves on the dressing side, and a slice of tomato (if desired). Spread as much tuna mixture as you want on the other slice of bread
Variations: add red bell pepper, pine nuts (or sprinkle pine nuts on sandwich).
