 Passover Tuna in Bell Peppers

Serves 34


Dressing

1/2 cup low-sodium tomato juice

3 tablespoons lemon juice

1/2 teaspoon onion powder

1/2 teaspoon paprika

Pinch black pepper, or to taste


  • In a small bowl, combine the dressing ingredients.

Tuna Salad

6 oz cans Vital Choice Albacore tuna*, drained

2 tablespoons green or red pepper, minced

2 small carrots, shredded

2 green peppers, halved lengthwise and seeded


  • In another bowl, combine the tuna, carrot, and minced pepper. Pour the dressing into the tuna salad and mix thoroughly. Fill the green pepper halves.
