As long as Tuna boats have plied the Mediterranean, the tender belly meat of the fish – called Ventresca in Italy – has been prized as the most succulent part.

Unlike national brands, our canned Albacore Tuna is cooked only once, to preserve its fresh flavor, firm texture, and healthful omega-3s.

In addition to ample protein, Albacore provides omega-3s in abundance, and substantial amounts of vitamin D.

Optimally pure, tender, and sustainable
All Vital Choice Albacore comes from a North Pacific fishery in which smaller boats line-catch individual tuna using the sustainable troll method, which ensures careful handling of each fish, safety for dolphins, and very minimal bycatch.

Thanks to its sustainable harvest and lower mercury content, albacore from this fishery is categorized as “Super Green” by Monterey Bay Aquarium.

Vital Choice Albacore Tuna is sustainably harvested by our neighbor Paul Hill, who quickly flash-freezes it on his small boat to preserve the fish at its peak of freshness. Click here to learn more about our sustainably caught tuna.

Because predatory fish such as tuna accumulate mercury over time, Paul provides us with younger, smaller Albacore tuna (14 lbs. or less) for optimal purity*. For more information on this subject click to our FAQ about mercury in tuna.
 
*Our fishers do not target only the smallest halibut, tuna or other species, but these smaller fish comprise a portion of every boat's catch. Once at the dock the fish are size-graded. Most companies prefer larger fish because they yield more flesh per pound and are less costly to process. We purchase the smallest available fish, and spend more on the processing because we (and our customers) believe their superior flavor and optimal purity are worth it.

Storage

Serving Tips
The classics -- tuna salad in sandwiches or salads -- remain the best ideas.

Mayo-Free Tuna Salad
We like to replace mayonnaise with heart-healthy olive oil. Mayo is usually made with oils high in generally pro-inflammatory omega-6 fatty acids, which compete with the omega-3s in fish for space in your cell membranes.

4 sun-dried tomatoes (optional)
1/4 red onion, minced
12 ounces Albacore Tuna in water, drained
1 rib celery, chopped
2 tablespoons organic extra virgin olive oil
2 tablespoons chopped fresh basil, cilantro, or parsley leaves
Kosher sea salt and organic lemon-pepper mix

Cover the sun-dried tomatoes with hot water in a bowl. Set aside until soft, about 20 minutes, then drain, chop, and put in a medium bowl. To mellow the minced onion, soak it in cold water for 10 minutes, then drain it well, pat dry and add to the tomatoes. Add the tuna, breaking it into large chunks, along with the celery and toss to combine. Add the olive oil, lemon zest and juice, and basil and toss again. Season, to taste, with salt and pepper.
Serve on whole grain bread or mixed greens.

Review: This tuna is so delicious. I eat it just as is; no need to make tuna salad of it. If you do, use mild flavors because this tuna is so flavorful and tender that you don't want to drown it with other flavors. Maybe you'd place it on a small bed of lettuce, chopped celery, green onions and tomatoes and let the diner choose to mix or not. Use all the oil; it's delicious!

Review: When the first bit of Ventresca touched my tongue and I inhaled its aroma, I realized that I was about to have a wonderful experience. I have never eaten tuna that was so tender and delicious right out of the can. This is the best of the best Albacore tuna with the other Vital Choice tunas being in second place. I will treat this Ventresca like the delicacy that it is.

Review: Talk about an indulgence! Wow. The Ventresca was amazing. If you've never tried it, you really should treat yourself. It is so tender it almost melts in your mouth. This is not what one probably thinks of when they think of "canned tuna". It's a whole different level.
