Our Extra-Dark Organic Chocolate is hand-crafted with intensely aromatic cocoa from South America, the Carribean, and Africa, and boasts a whopping 80% cocoa solids … rich in flavor and beneficial polyphenols.

Unlike some chocolate, ours is made with raw cocoa that has not been treated with alkali ... a standard process called Dutching, which destroys most of cocoa's beneficial antioxidants.

Our extra-dark chocolate contains 80% cocoa solids, which have not been treated with alkali ... a standard process called Dutching, which destroys most of cocoa's beneficial polyphenols.
 
The polyphenol content of cocoa solids exceeds that of all common foods, including tea, berries, or grapes.
  • The polyphenols abundant in extra-dark chocolate (catechins, procyanidins, and more) appear to support artery function and promote healthy blood fat and clotting profiles.
  • The 7 grams of saturated fat per half-bar consist of stearic acid from cocoa butter, which has no known adverse effects on blood cholesterol profiles.

Natural, non-Dutched cocoa yields antioxidant-rich chocolate!
Our chocolate contains high levels of antioxidants, based on independent and USDA test results ... thanks to gentle processing and use of non-Dutched* cocoa. 

Brunswick Laboratories tested our chocolate bars in 2010, and found antioxidant levels that rival the high, “benchmark” levels found in natural, non-Dutched cocoa powder.

*Because alkalizing ("Dutching") cocoa cuts its antioxidant content drastically, we insist on non-Dutched cocoa for our chocolate, which is gently processed to further protect its antioxidants.
