And it couldn’t be easier to enjoy … just thaw the liquid, add the fish and shellfish of your choice, cook briefly according to directions, and serve. 

Enjoy your hearty seafood soup/stew "straight up", or ladle the Cioppino over pasta … either way, serve it with a garlicky baguette (sourdough is traditional) to sop up the last stupendously delicious drops! 

Good choices include Cod, Clams, Mussels, Scallops, Prawns, Halibut, and Wild Salmon.

This classic seafood stew was created by San Francisco’s Italian fishermen more than 100 years ago, as a quick, easy, delicious way to enjoy odds and ends from the catch of the day.

Vital Choice Organic Cioppino is handmade in an artisan kitchen, using our own unique, savory recipe, inspired by the original. 

Easy preparation 
It couldn’t be simpler to serve up some Cioppino: 
  • Thaw the pouch contents, empty into a saucepan, and heat gently until steam curls up.
  • Add your choice of thawed* seafood — we suggest 3 to 6 ounces per person. 
  • Cover the pan and simmer the stew on low until the seafood is almost done (5 to 8 minutes). Do not allow the stew to fully boil, or to simmer longer than is needed to cook the seafood through.
  • Remove pan from heat and leave lid in place for 3 to 4 minutes.
  • Ladle the Cioppino into bowls – with or without some freshly cooked linguine – and enjoy!
One Cioppino pouch serves two to four, depending on the amount of seafood and/or vegetables added. 

Optionally, you can include some pre-cooked vegetables (e.g., spinach and zucchini) and/or beans … just don’t overcrowd the stew! 

*To quick-thaw any of our fish or shellfish: keeping fish portions in their sealed packages, immerse in cold water until fully flexible (20-30 minutes).
You can use frozen fish and shellfish in the stew ... just double the cooking time indicated above.

What's in a name?
Cioppino was created by Portuguese and Italian fisherman who settled in the North Beach section of San Francisco in the late 1800s.
 
Cioppino traditionally consists of the catch of the day … often a mix of crab, clams, shrimp, scallops, squid, mussels, and fish.
 
The name may come from ciuppin ... a Genoese word meaning “chopped”, in reference to the way fishermen prepared seafood for the stew.
 
Others say it derives from the cry of the wharf cooks for the fishermen to “chip in” to the collective soup pot.

Either way, it’s delicious!

Storage
Keep frozen. Store any unused portion in the refrigerator for no more than one week.
 
Thawing instructions
Thaw under refrigeration at or below 38 degrees Fahrenheit (3 degrees Celsius). Before thawing, puncture or remove packaging.
 
For quick-thawing, place frozen package in cool water for approximately 20 to 30 minutes, just until contents are flexible. Once thawed, immediately cook or refrigerate (if refrigerating, puncture package). Prior to cooking, do not allow fish to reach temperatures above 38 degrees Fahrenheit (3 degrees Celsius).

Review: I simmered this wonderful soup with your cod, clams, salmon and scallops. It made a very hearty meal, along with a crusty bread for mopping up the last drops in the bowl. Very flavorful and satisfying. I've already ordered more.

Review: We were served this delicious soup during our visit with some friends. However, for our own health requirements, the sodium content per serving is far too high. We would like to see you reduce, or eliminate the ADDED sea salt. Then, as informed consumers, we could add our own salt if we found it necessary to do so.
