We call it a “living” food because it’s been fermented by – and provides – the kind of active Lactobacillus culture that’s long been prized for its health-promoting properties.
In addition to some companion cabbage, we add some of the herbs and spices used to enliven this traditional European treat – aniseed, tarragon, nutmeg, ginger, and cloves – plus a pinch of sea salt.

Simply thaw and serve.
After thawing, natural fermentation will continue and the package may swell. This natural process will not affect the quality of the contents.
After thawing, keep refrigerated and enjoy within one month.

Hot Pink Beet Dip
Variation: For a smoother and richer dip, add 1/4 to 1/3 cup mayonnaise and mix with a fork.
Makes about 2 cups.
- 1 package Vital Choice Organic Raw Cultured Beets
- 8 oz firm tofu, drained and pressed to remove excess water
- 1 or 2 medium size cloves of fresh garlic
- 1/2 tsp sea salt
- 1/4 tsp cayenne pepper
In a food processor, puree tofu and garlic until smooth. Add other ingredients and process until desired consistency. Refrigerate several hours or overnight. Best if prepared the day before.
