Our unique sausage – featuring pure, wild Alaskan Sockeye Salmon – is a deliciously healthful breakfast food and works well in many culinary contexts

Chorizo is the spicy sausage popular in Mexico and Spain. Our healthier version boasts a mildly spicy “bite” with notes of cinnamon, garlic, and pepper.
Vital Choice Salmon Chorizo is great with eggs, and perfect in burritos, stews, soups, paella, or sautéed with vegetables.

We use only certified-organic herbs and spices to season our patties. A very small amount of natural arrowroot powder is used as a binding agent. Despite great care, small bones or fragments may occasionally remain.

In addition to ample protein, wild Alaska Sockeye provides three beneficial natural food factors in abundance.

    Sockeye salmon for exceptional nutrition
These are the average amounts of two important salmon nutrients per 3 oz patty:*
    • Omega-3s – About 1,000 mg.
    • Vitamin D3 – About 580 IU. The US RDA is 400 IU, but most experts advise adults to consume 1,000-2,000 IU every day. Ounce for ounce, Sockeye Salmon provides much more vitamin D -- in the optimal D3 form -- than any other whole or fortified food.
*Nutrient values will vary annually and by salmon-harvest location.

    Thank you, Dr. Weil!
For years, bestselling health and nutrition authority Andrew Weil, M.D. urged us to offer Salmon Sausage. Dr. Weil even gave us seasoning recipes that he created in his own home kitchen!

With his seasoning plans in hand, we finally fulfilled Dr. Weil's wish ... and you'll be glad we did, because his recipes make our patties perfectly delicious!

    Storage
Keep frozen at or below 0° F (-18° C). Vacuum-sealed fish held under these conditions should retain its quality for at least six to 12 months. Shellfish and lean white fish (halibut, cod) generally have a longer freezer life than fatty fish (salmon, tuna, sablefish).
NOTE: Fish stored in frost-free freezers should be used within 3 months.

    Thawing instructions
Thaw under refrigeration at or below 38 degrees Fahrenheit (3 degrees Celsius). Before thawing, puncture or remove packaging.

For quick-thawing, place frozen package in cool water for approximately 20 to 30 minutes, just until contents are flexible. Once thawed, immediately cook or refrigerate (if refrigerating, puncture package). Prior to cooking, do not allow fish to reach temperatures above 38 degrees Fahrenheit (3 degrees Celsius).

    Serving Tips
You don’t need to thaw the patties before cooking them using the pan or baking methods below.
For even faster cooking, thaw patties overnight in refrigerator, or place unopened package in cold water for 30 minutes or until flexible.

    To Pan-Fry Frozen Patties
Cook frozen sausage in a sauté pan, covered, over medium heat for 7-10 minutes*, turning once. Remove the pan from the heat, still covered, for 2-3 minutes before serving.

    To Bake Frozen Patties
Add a touch of oil, broth, wine or water to the pan and bake the frozen patties, covered, for 15 to 20 minutes at 400 degrees. Check them after 12 minutes to be sure they're not overcooking. Sockeye salmon is rich in healthful omega-3 fatty acids, but is relatively lean overall and will taste dry if overcooked.

    "Perfection"

Review: I LOVE Vital Choice. Their products are healthy, delicious and smart for today's on-the-go person. I have tried the salmon burgers...excellent, the spicy chorizo sausage, italian sausage and herbed sausage. This is one of my faves. Portion size is perfect. My only suggestion would be to reduce the amount of sodium in the product.
