Maine Style Crab Rolls

Maine Style Crab Rolls
Crab rolls are every bit as scrumptious as lobster rolls … especially with Alaskan Tanner crab. 
It couldn’t be simpler: mix the crab meat (leg, shoulder, or a combination) with a bit celery for crunch, fresh herbs, and your favorite mayonnaise.  I’ve included the recipe for a delicious, healthier homemade mayonnaise made from olive oil and macadamia nut oil (see America's Sickening Omega Imbalance).
Serve on a buttered brioche, challah bun, or hot dog bun. 

1 ½ cups wild Alaskan Tanner crab meat, defrosted
½ cup finely diced celery
1 tablespoon fresh lemon juice
1 tablespoon finely chopped fresh tarragon or parsley
¼ teaspoon salt
Freshly sprinkled black pepper
1/3 cup mayonnaise*
Dash of hot sauce
4 hot dog buns, or brioche or challah rolls, toasted and buttered.
Lettuce leaves 

In a medium bowl, mix the crab, celery, tarragon, lemon juice, salt, black pepper, mayonnaise, and hot sauce. Serve on toasted, buttered bun lines with lettuce leaves. 

Myra's healthy homemade mayonnaise
Makes 1 cup 
2 egg yolks
Lemon juice
¼ teaspoon salt
1 teaspoon mustard

Whisk in the oil, drizzling in slowly at first, then faster when the mayonnaise starts to thicken. Stir in the salt and the mustard. Store refrigerated for up to a week.
