White Peony (Bai Mu Dan) tea is prized for its smooth, sweet flavor and slightly woody, toasted aroma. Gentle processing and a unique withering process yield an amber-orange brew with a full, non-astringent feel that pairs well with most foods. White tea offers more antioxidants than green or black teas.

White tea is simply green tea that has been picked before the leaf buds have opened, while they are still covered with silky white hairs. It is air-dried, not heated, and is not allowed to ferment or oxidize.

As a result, white teas boast uniquely sweet, subtle flavors, and possess about three times the antioxidant power of green tea. Our White Peony tea is grown in the Fujian Province of China where it is known as Bai Mudan. It exudes an aroma of sorrel and imparts pleasing, nutty notes.

White tea appeals to many people who seek the health benefits of tea, but find the taste of green or black tea too strong.

Steeping Guidelines - White Peony Tea

1. Start with your favorite spring or filtered water. Use water well below boiling temperature (185°F).
2. Use 1-1/2 tablespoons for a 6 oz serving. Steep for 3-5 minutes.

Remove the leaves when ready, relying on taste, not color. Re-steep to make another cup! Use a large enough strainer basket to allow the leaves to open and release their flavor.
Play with the amount of tea, the water temperature and steeping time. Get to know the tea.
