Of cinnamon and synonyms: Names differ, but all kinds are "true"
There are some 100 species of Cinnamonum, but Ceylon (C. zeylanicum), Chinese (C. cassia), and Indonesian (C. burmanii or cassia) cinnamon are the leading kinds by far. Ceylon cinnamon is often referred to erroneously as “true” cinnamon, simply because it was the first kind introduced to the Western world.
The bark used to make our Cinnamon Sticks comes from the species Cinnamomum cassia. All three species (C. zeylanicum, C. cassia, and C. burmanii feature very similar fragrances and sweet, warm flavors. Chinese and Indonesian cinnamons are much more common in North America.
