Like all chili peppers, the cayenne pepper is a member of the Capsicum family of vegetables, which get their heat from a phytoceutical compound called capsaicin.
This popular member of the chili family gets its name from Cayenne Island in French Guyana, which was once the main source.

Health benefits:

  • Countries where hot peppers like cayenne are commonly consumed enjoy reduced rates of heart attack, stroke, and pulmonary embolism (lung clots).
  • Cayenne and other red chili peppers reduce blood cholesterol and triglyceride levels, and reduce platelet aggregation (blood “stickiness”) , while curbing excessive blood clotting.
  • Capsaicin, the "hot" principle in all chili peppers, prompts burning of body fat, inhibits inflammation, retards the growth of certain cancer cells, enhances digestion, and blunts appetite.
  • Capasaicin is an FDA-approved analgesic used in topical creams, and works by blocking a pain-messenger chemical called neuropeptide Y.
  • The phenols in cayenne and other chilies reduce activation of Nf-kappaB: a pro-inflammatory “nuclear transcription factor” linked to inflammatory diseases including cancer, atherosclerosis, diabetes, allergy, asthma, arthritis, Crohn's disease, and Alzheimer's disease.

Storage
Keep tightly sealed in a cool, dry place. Best if used within six months of purchase.
Caution: Cayenne is very hot and spicy. Test small amounts in recipes first, lest you overdo it!
