And – unlike almost all chocolate – ours is made with raw cocoa that has not been treated with alkali ... a standard process called Dutching, which destroys most of cocoa's beneficial antioxidants. Health benefits The flavanol antioxidants abundant in extra-dark chocolate (catechins and OPCs) are shown to help prevent damaging oxidation of LDL cholesterol, open arteries, and enhance their functioning, and reduce blood stickiness (platelet activation). Our chocolate contains no milk fat (just minuscule traces of milk protein). Instead, the 8 grams of saturated fat per half-bar consist of stearic acid from cocoa butter, which has no effect on blood cholesterol levels.
